This vegan pancake recipe is perfect for any time of day, especially for getting a good dose of protein after a workout! Get cooking!
- 230 ml dairy-free milk (almond, coconut or soya)
- 1 cup of gluten-free all purpose flour
- 1 large mashed banana
- 1 tsp baking powder
- 1 tsp baking soda
- a sprinkle of cinnamon
- 3 tsp coconut oil
- a generous squeeze of Gourmet Drops (we like Chocolate flavour in this recipe)
Firstly, mix together the milk, banana and Gourmet Drops until well mixed. In a separate bowl, mix together all the dry ingredients. Add the dry ingredients into the wet gradually until the two form a consistent texture. Heat up the coconut oil in a pan over medium heat. Add a quarter of the batter to the pan and allow to cook for around 4 minutes before flipping and cooking for another two minutes. Repeat this with the rest of the batter and serve immediately.
Garnish with your favourite toppings...we like fruit and nuts!
