Low-Sugar Vanilla Banana Muffins

These indulgent but light muffins are perfect for those with a sweet tooth. They're quick and easy to make and perfect for breakfast, dessert or even just a tasty snack. Get baking!


  • 150 grams cup whole wheat flour
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 3 medium mashed bananas
  • 2 large eggs
  • 60ml cup canola oil
  • 60ml cup water
  • 3 generous squeezes of Vanilla Gourmet Drops
  • 90 grams rolled oats
  • 100 grams chopped walnuts


Firstly, preheat your oven to 160 degrees Celsius and prepare a muffin tray with muffin cases. Add the flour, salt, baking powder, cinnamon and oats to a bowl and combine. In a separate bowl, whisk together the mashed banana, water, oil, eggs and Vanilla Gourmet Drops. Add the wet mixture to the dry in around 3 parts while stirring. Once well combined, mix in the chopped walnuts. Spoon 1/4 cup of the mixture into each muffin liner. Finally, bake the muffins in the oven for around 20 minutes or until risen and slightly browned. Allow to cool slightly and enjoy warm with your favourite coffee. YUM!
