Chocolate Chip Cookies are a classic, and this low-fat twist means that you can still enjoy a deliciously soft choc chip cookie without the guilt!
- 180g whole wheat flour
- a pinch of salt
- 2/3 teaspoon cornflour
- 2/3 baking powder
- 40ml melted coconut oil
- 1 medium egg
- 3 teaspoons Vanilla Gourmet Drops
- 3 teaspoons milk (skimmed, almond or soya)
- 90g light brown sugar
- 40g dark chocolate chips
In a mixing bowl, mix together the flour, salt, cornflour and baking powder. Separately, whisk together the coconut oil and egg white until the mixture turns a white colour and whisk in the Gourmet Drops, milk and brown sugar. Once the mixture is smooth, add the mixture to the dry ingredients and stir until well combined. Add the chocolate chips and mix until they are consistent throughout the mixture. Cover the mixing bowl with plastic wrap and put in the fridge for around 30 minutes.
Preheat the oven to 180 degrees Celsius and line a baking tray with parchment paper. Take the dough from the fridge and form into around small balls and place on the baking tray. Flatten each cookie to around 1 cm thick and bake for around 10 minutes or until the cookies begin to brown. Allow the cookies to cool and enjoy slightly warm. YUM!
