Healthy Oat Pumpkin Spiced Cookies

Love all things fall flavoured but trying to diet? Have no fear! These are the perfect low-fat snack to get you in the festive autumn mood, if you love Pumpkin spice, these are the cookies for you! They're also super quick and easy to make...bonus! 


  • 270-300g oats (the more oats, the firmer the cookies)
  • 1 tin pure pumpkin pure
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 80g raisins (optional) 
  • Caramel Gourmet Drops 


Preheat the oven to 250 degrees celsius and line a large baking tray with baking paper. To make the cookies, add the oats, cinnamon and nutmeg to a bowl and combine well. Fold in the pumpkin pure and then, add in Caramel Gourmet Drops to taste and mix well. Finally, add in the raisins and mix until consistent. 

Make the cookies by forming around 12 balls of dough, slightly flattening down the cookie to around an 1 1/2 inch thick and spacing out evenly on the baking tray. 

Bake the cookies for around 12 minutes or until the cookies start to darken in colour. Enjoy warm or keep in the fridge.

Tip: They go great with banana or peanut butter spread on top...enjoy!
