Healthier Carrot Cake

Carrot Cake is a classic and we don't think anyone should miss out. That's why this recipe is low in fat, calories and sugar! All the delicious taste of a Carrot Cake minus the guilt...

Cake Ingredients

  • 3 medium eggs
  • 6 dates
  • 200ml of almond milk
  • 2 medium carrots
  • 100g oat flour
  • 3 tablespoons of coconut Oil
  • 5 teaspoons of salt
  • 1 teaspoon of Vanilla Gourmet Drops
  • 2 teaspoons of baking powder
  • 2 teaspoons of cinnamon

Frosting Ingredients

  • 100g low fat cream cheese
  • 75g cream quark
  • a squeeze of Vanilla Gourmet Drops


Start by pre-heating the oven a 175 degrees celsius and line a standard baking tin with grease or baking paper. Put the eggs and dates in a food processor and pulse until the dates are well mashed. Next, add the eggs and dates with the remaining ingredients to a bowl and mix until all the ingredients are combined and the texture is smooth. Pour the mixture into the cake tin and bake in the oven for around 30 minutes or until risen and slightly brown. 

While the cake is baking, to make the frosting, simply add the ingredients to a bowl and mix until smooth and keep in the fridge until the cake is out of the oven and cooled. Add the frosting to the cake and enjoy!
