Mothers Day Cookies

Mother's Day doesn't have to be about overindulging... Make her breakfast in bed with these yummy, guilt-free cookies. Add a personal touch by decorating them with icing or simply dunk them into a Gourmet Drops infused Latte! 

  • 15oz plain flour
  • a pinch of salt
  • 1 level tsp baking powder
  • 1 level tsp ground almonds
  • 4oz low fat spread, suitable for baking
  • 4oz dark muscovado sugar
  • 2 large eggs
  • 4 tbsp runny honey
  • A squeeze of Caramel Gourmet Drops


Preheat the oven to 170°C/150°C Fan/Gas 3.

Blend the flour, baking powder, almonds,sugar, salt, margarine and Gourmet Drops in a blender and blend until well mixed. Slowly add the eggs and honey in parts until the mixture is a good consistency (you may not need to use all of the eggs/honey).

Clear and clean an area of workspace and dust with flour. Roll the mixture out to about 1/2 cm thick and cut into your desired shapes. Reuse the mixture to repeat this process until you have used all of the mixture. Line a baking tray with parchment paper and bake in the oven for 20 minutes or until brown. Before you dig in leave on a cooling rack for 10 minutes.
