Vanilla Banana Muffins

These indulgent yet light muffins are perfect for those with a sweet tooth. They're quick and easy to make and perfect for breakfast, dessert or even just a tasty snack. Get baking!



150 grams cup whole wheat flour
4 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
3 medium very ripe bananas
2 large eggs
60ml cup canola oil
60ml cup water
3 generous squeezes of Vanilla Gourmet Drops
1 Tbsp vanilla extract
90 grams rolled oats
100 grams chopped walnuts



  • Preheat your oven to 160 degrees
  • Put the flour, salt and baking powder in a bowl and mix
  • In a separate bigger bowl, whisk together the mashed banana, water, oil and your Vanilla Gourmet Drops
  • In another bowl, mix bananas, eggs, oil, water and vanilla and beat until well blended
  • Add flour mixture and stir until moistened
  • Stir in oats and nuts
  • Spoon 1/4 cup mixture into each muffin liner
  • Bake on 160 degrees in oven for 25 min (or until toothpick comes out clean)
