Low-fat Carrot Cake Baked Oat Muffins with Caramel Quark

This yummy carrot cake will satisfy any sweet tooth without the guilt of a heavy dessert. Low fat ingredients make this a carrot cake with a twist! We think it goes great with Quark and berries. 
  • 1 egg
  • 55g almond butter
  • 210g cups old-fashioned oats
  • 3/4 cups milk 
  • 1/ 8 cup honey
  • 1/2 tsp vanilla extract
  • 1/4 tsp kosher salt
  • 2 Ripe Banana's
  • 1 teaspoon baking powder
  • 3/4 cups carrots, grated
  • 1 1/2  teaspoon cinnamon
  • 88g raisins
  • 30g chopped pecans
  • Caramel Gourmet Drops
  • Quark (for topping) 
  • a handful of berries


Firstly, preheat the oven to 375 degrees Celsius. Prepare a muffin cup tray with muffin cups (12).

To make the muffins, mix mashed banana, almond butter, oats, milk, honey, Vanilla Gourmet Drops, Salt, Egg, baking powder, carrots and cinnamon. Once well mixed, fold in the raisins. 

Next, divide the mixture evenly between the muffin cups and sprinkle with chopped pecans. Place in the oven for 20-30 minutes or until well risen and leave to cool for 5 minutes.

To serve, in a bowl mix your desired amount of quark with a squirt of Caramel Gourmet Drops and pour over a muffin. Sprinkle with berries or fruit of your choice and enjoy!
