Low-fat Caramel Bites

These gooey caramel bites are perfect for a mid-afternoon snack or after-dinner bite. Their easy to make and don't even require cooking!

Ingredients

  • 260g of pitted dates
  • 80ml coconut oil  
  • 50ml almond milk 
  • 4 teaspoons of Caramel Gourmet Drops 
  • a pinch of salt 
  • 100g dark chocolate

Instructions

Soak the dates in hot water for at least 15 minutes. Drain the dates and add them to a mixing bowl along with 60ml of the coconut oil, almond milk and Gourmet Drops. Blend with a food processor until smooth and put in the fridge until the mixture is hardened. 

Once the mixture is much thicker, form into around 2 inch balls, this should leave you with around 8 bites. Set aside for later. To make the chocolate coating, mix the remainder of the coconut oil and the melted dark chocolate and evenly coat each caramel bite with the chocolate. Set in the fridge for at least 1 hour and enjoy!
