Healthier Carrot Cake

As the weather gets warmer and the nights get later, why not treat yourself to this indulgent and Moorish Carrot cake? With less calories and fat and all natural ingredients, what's stopping you?

Ingredients

Cake

  • 3 Medium Eggs
  • 6 Dates
  • 200ml of Almond Milk
  • 2 Medium Carrots
  • 100g Oat Flour
  • 3 Tablespoons of Coconut Oil
  • 5 Teaspoons of Salt
  • 1 Teaspoon of Vanilla Gourmet Drops
  • 2 Teaspoons of Baking Powder
  • 2 Teaspoons of Cinnamon

Frosting

  • 100g Low Fat Cream Cheese
  • 75g Cream Quark
  • stevia lemon drops

Method

Pre-heat the oven at 175C.

Put the eggs and the dates in a food processor and mix. Next, grate the carrot and add it, along with the rest of the ingredients, to the food processor with the egg mix. Pour the smooth batter into a greased cake tin around 18cm wide. Put into the oven and bake for around 45 minutes or until cooked through. Remove from the oven and allow to cool. As the cake is baking, to make the frosting, put the ingredients in a bowel and mix, add to the cake when it is cooled and enjoy!
